My local grocery store has had some pretty orange cauliflower in lately, which I decided to try. It turned out nicely, but I really didn't have any intention of crucifer blogging, until after my kid ate the new food with minimal fuss, my husband, who usually avoids vegetables, went into the kitchen and helped himself to seconds and my mom asked for the recipe.
1 head of cauliflower
1/2 C bread crumbs
2 Tbs dairy free margarine
1 tsp Italian herb mixture
Preheat oven to 350F. Remove stems and core of cauliflower. Place in an inch of water in a pot with a secure lid. Bring to a boil, then turn off heat and leave on burner to steam for ten minutes. Melt margarine and mix with bread crumbs and herbs. Arrange steamed cauliflower pieces in oven safe dish and cover with bread crumb mixture. Bake for twenty minutes.
This was the second cauliflower I cooked. For the first one, I did not melt the margarine, but rather smeared it directly onto the cauliflower, then sprinkled the herbs and bread crumbs on top. The seasoning was more uniformly distributed through the dish, and mom liked that version better.

When I got home, after visiting the Kid and his parents, (My daughter knows I don't really come to visit her) I made this cauliflower at home. If you don't have a dairy allergy in your house, adding some grated parmesan to the bread crumbs gives it an even better taste. The Kid's Nana
