Banana Wrap Lunchbox
Last week I ran out of bread and fresh grapes for The Kid's lunchbox, because I was so busy getting my Project Food Blog post up that weekend, that I didn't have time to go grocery shopping. (Spending more time on the food blog about feeding my allergic child than actually feeding him is NOT a good sign.) The upside is that I can share another of my "nothing to pack" lunchboxes, which in the real world are probably more helpful than the cute ones.
In it you will find a tortilla spread with Sunbutter and rolled up with a banana inside then cut into slices, pretzels from a bag, mandarin oranges from a can, carrots (still not a garnish) from the bottom of the veg drawer in the fridge, a little box of raisins, a reusable juice box filled with apple juice/water mixture and an iguanadon sticker.
My point (other than "Get off the computer and take care of your kid!") is that it pays to have a stash of nonperishables for those mornings when you forgot something, ran out of something or the hubs ate something that you thought was waiting to be packed for lunch.

This is adorable! Especially the little elephant on the mandarin oranges. My nephew is barely 2, and my sister takes care packing his lunch everyday, but he's not quite at the point of taking lunches with this much food and variety! I'm sure she'd love to see this, haha.
I love that idea! I am going to have to make that for myself.
So cute! I am gluten-free, lactose/casein free, and also allergic/off eggs, all meat, fish, seafood, poultry... the list goes on. I love reading your blog for ideas.
What kind of tortilla do you use? I keep hunting for a good one that is safe and tasty to eat, but no luck so far.

Stretching - I use plain old flour tortillas from the grocery store. I've seen gf ones at my health food store, but don't know what brand/how good they are. You might be able to find naturally gf corn tortillas, the fresher, the better.

Hi again, Libby ~ Any trick to keeping the tortillas from unrolling. I've tried toothpicks but fear I may forget to take them out (like when I'm blogging during busy mornings ~ yikes). Thanks for another beautiful lunch lineup.
Hey Elizabeth, I'd just take a picture the next time I make one, but it may be a while, since I've just been advised by my son's teacher that the reason he is so enthusiastic about banana wraps is because the slices make excellent projectiles.
So, I hope the description makes sense: Lay the tortilla flat, then cover the entire area top to bottom with a very thin layer of Sunbutter. (I skip the far left and right sides.) Peel the banana, place it at the bottom edge, and carefully roll it away from you. Keep the wrap tight and gently press to eliminate the bend. If the entire tortilla has spread on then it should stay closed. I discard (or eat) the end slices.

And my husband has on more than one occasion ate what I was planning on giving my daughter for lunch.

Hi Tiffany, I am in the middle of writing the epic lunch packing post I've been threatening to put up for a few years, but have been too busy at back to school time to actually get it done. Hopefully it'll be up in the next day or two!
