Halloween Lunchbox


This year's Halloween lunchbox was much  less elaborate than some of the others in years past.  I made a couple small sandwiches by cutting two ghosts and two pumpkins out of whole wheat bread with cookie cutters.  For the ghost's eyes and mouth, I made small holes with two different sized piping tips.  For the Jack O'Lantern's eyes, nose and mouth, I used a small triangle cutter from my snowflake cookie cutter set.  Then I spread jelly on the uncut bread and spread Sunbutter on the backs of the pieces with holes, being careful to avoid spreading it into the holes or tearing the bread.


On the side are mandarin oranges (chosen for their color) plus a fork to eat them and a pumpkin cupcake.  I used the batter from my Pumpkin Bundt Cake baked in lined muffin tins (divide evenly between two dozen) and popped in the oven for twenty minutes at 350°F.  The icing recipe needs to be doubled to cover all the cupcakes for this simple and delicious fall treat.

The lunch is packed in an Easy Lunchbox with a reusable juice box filled with apple juice on the side.  I hope you had a happy and safe Halloween!
