Dry Ingredients:
1-1/2 C all-purpose flour
1/2 C toasted wheat germ
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
Wet Ingredients:
3-4 overripe bananas
1 C applesauce
1/4 C brown sugar
1 tsp. vanilla extract
1/4 C melted dairy-free margarine, plus additional to grease pan
Optional:
1 C golden raisins
Preheat oven to 350F. Grease standard muffin tin or loaf pan.
Mix dry ingredients in large bowl and set aside. In a medium bowl mash together wet ingredients with a potato masher or large fork until smooth. Pour wet ingredients into dry and stir until just combined. Fold in raisins, if desired.
Spoon into muffin tin or loaf pan. Bake 35-40 minutes for muffins, 50-60 minutes for bread. Check for doneness with a toothpick before removing from oven. Allow to cool for 15 minutes before removing from pan.
