There's no school today, but here's a sweet little lunch to tide you over! This is a great sandwich for when there's too many banana pancakes in the freezer or not enough bread in the kitchen. The pancake sandwich has Sunbutter and my mom's homemade raspberry jelly in it, then is cut into quarters. It's accompanied by sliced cucumber, grapes and a flower cookie with the lollipop stick shortened to fit in the Easy Lunch Box with apple juice and a dinosaur fossil sticker on the side.

You are a genius. I always rack my brain with what to make for V for lunch. Pancakes for lunch. Duh why didn't I think of that!

Alisa, they reheat well. When eating in the morning, the trick is to heat in toaster on low/med setting then put in microwave for no more than 5-10 seconds. That way way they aren't too hard or too soft. (I feel like Goldilocks!) If using for a sandwich, I skip the microwave.
