Pizza Muffin Lunchbox and Good News


Today is Friday, which usually means the school cafeteria will be serving pizza. So that my son isn't left out, I've developed a recipe for Pizza Muffins, which are really glorified biscuits with pizza seasonings and toppings baked in a muffin tin. I keep them in the freezer and can just pop one into his lunchbox on pizza day!


In addition to the Pizza Muffin, today's Easy Lunchbox contains edamame in a Wilton Square Silicone Baking Cup, Honey Maid Angry Birds (graham crackers) and grapes. As usual, there is apple juice on the side in a reusable juice box.

Now for the good news (short version). On the first day of school I discovered that the school district's policy had been changed without notice and my son's Epi-Pen would no longer be kept by his teacher, but rather locked in a cabinet by the front office. I turned in an authorization to self carry with additional orders from the doctor that the epinephrine should still be administered by trained school personnel. Initially the county administration rejected it, but I climbed the administrative ladder until I was notified this morning that they would accept the order as written. I will post the (very) long version of the story tomorrow!

I do have a bit of bad news. I won't be sharing my awesome Pizza Muffin recipe. That's due to some other good news, though. I am saving it for a cookbook of food allergy friendly lunchbox ideas and recipes that I am writing...and I will share more about that later, too!

Wait...no recipe for pizza muffins? I know books take months and months to be published...I hope we won't have to wait too long, you're recipes get us through so much!

Amazing lunch. So sad you aren't sharing the recipe, but I can't wait to get my hands on your cookbook!! That is AWESOME! I am so happy that you took the time to climb the administration ladder and advocate for your son. I pray he never needs his EpiPen at school, but what a relief to know it is on his body at all times. Thank you for linking to 15 Minute Fridays! Again, I can't wait to see your book!
