Corn Puppies

Here's the recipe from the lunchbox as promised.
Ingredients:
1 Tbs lemon juice + 1/2 C soy milk
1 Tbs honey

3/4 C AP flour

1/2 C corn meal

1/2 tsp baking powder

1/4 tsp baking soda
1/4 tsp salt

2 Tbs dairy free margarine

8-10 small precooked turkey sausages
lollypop stick for each sausage

Preheat oven to 450°F. Mix together lemon juice and soy milk and set aside. Sift together flour, corn meal, baking powder, and salt into medium bowl. Cut margarine into small pieces and quickly rub it into the flour mixture with your fingers until evenly distributed. Stir honey into soy milk mixture, then stir liquids into dry ingredients.
Once the biscuit mixture is completely combined, pat it out onto a well floured surface with well floured hands. Gently fold the dough in half, then pat it out again into a round, then fold again. Repeat four or five times, then divide dough into the same number of pieces as you have turkey sausage.
The sausage that I used for this is a little more processed than I like, but worked extremely well for the recipe. (I bought it to make calzones for The Kid's birthday party. Eventually I'll get that recipe up, too!) I don't remember the brand, but I found it in the freezer section, with ten precooked sausages in each package.
With your hands, press the dough into a rectangle appropriate for the size of the turkey sausage. Center sausage on the dough and insert lollypop stick. Fold dough around sausage and press together to make a smooth surface. Place completed corn puppy seam side down on a nonstick baking pan. (I used a cake pan.)
Bake for 8 to 10 minutes, or until lightly browned.  Allow to cool somewhat and serve with ketchup for dipping. I put them in The Kid's lunchbox to eat at room temperature, which tasted good, too.

Thank you so much for this recipe! Corn dogs are one of those things packed with allergies usually. I can't wait to try it! Your boy is so lucky to have such a dedicated mom!

I just stumbled across this from the wholesome lunches site - I'm lucky enough to not have allergies, however I am trying to eat healthily (and I live in the UK where we almost never get corn dogs - but I had one when I was little!)...

This recipe looks gorgeous, I've printed it and will definately have a go!

Just curious what is AP flour? I have a little one with milk, eggs, peanuts, and tree nut allergies. I am so glad I found your site!

All-purpose! It just means plain old white (wheat) flour.
