Pizza Lunchbox For Food Allergy Awareness Week
The only day of the week that my son wishes he could eat the school cafeteria lunch is Friday, or as it's better known, Pizza Day. Since this is the one school meal he asks me to match, I usually keep a stash of little home made pizzas in the freezer. I've tried a couple different ways to make and freeze mini pizzas and calzones, but a small veggie pie seems to be the winner.
This one has tomato, mushroom, and spinach, and is tucked into an Easy Lunchbox with grapes and a Yoda Jello Jiggler. (Unfortunately, Yoda doesn't really show up in the photo.) Jello may not be my first choice nutritionally, but my kiddo is terrible about drinking enough fluids. As the temperature here in Florida creeps up, I try to compensate by making him more soups, smoothies...and Jello. I found a Star Wars Jiggler Mold Kit on the clearance table of my grocery store, and have been putting it to good use ever since.

Healthy yummy pizza.
Sweet lunch! Is the green cupcake cup one of those silicone ones? If so, do you like it? I am tempted to buy some!
Now I'm just being annoying! BUT....school has started up in these parts. So, I'm now hinting heavily, borderline begging for lunch ideas. I can pop out baking ideas like a crazy girl, but lunch ideas leave me perplexed.
